The Scandinavian simple approach of the chef influenced our design of the bistro and rotisserie in the exclusive location at Jiří z Poděbrady Square. The new establishment was created in a fully equipped and approved space of a restaurant that was never opened and whose interior was overwhelmed with materials, colors, and motifs. The unusual entry conditions and financial limitations led us to the concept of partial dehipsterization or radical cut, which contrasts a new, sober layer with the existing collection of current trends and Pinterest clichés.

During the project, all the worst remnants of the original interior were eventually removed, but the concept of the cut was preserved. The proposed monochromatic layer calms and integrates the entire space, while below the level of the cut, a combination of fashionable yet appropriate materials unfolds. The ceramic cladding follows the white-painted bricks – the only remnant of the original interior aside from the floor – with its grid. A simple plywood bench smoothly transitions into the bar counter, behind which there is an open kitchen with a bar. Everything takes place in a single room: the guest area is defined by wood, the obligatory stainless steel delineates the service and production area, and everything is connected by our designed original lighting fixture.
