Prague - The construction of the food pavilion of the Czech University of Life Sciences in Prague symbolically began today with the laying of the foundation stone. It will cost approximately 430 million CZK, of which about 330 million will be for construction and 100 million CZK for technology. The pavilion should be completed by the end of 2022, but it should already be built by the end of next year, stated Roman Stupka, the vice-dean of the Faculty of Agrobiology, Food and Natural Resources, to ČTK.
The construction work will be carried out by PKS stavby, and 17 tenders will still be announced for the supply of technologies. The construction itself has already begun; currently, there is only a construction pit at the site of the future pavilion. The official launch of the project was postponed due to the coronavirus crisis.
The building will cover the main processing directions, namely pilot plants for meat and milk processing, a small-scale bakery and confectionery, a mill, an educational and demonstration brewery and malting plant, an oil press, and a place for processing medicinal plants, but also the possibility of processing fruits and vegetables, such as a jam factory, juice processing plant, or drying facility. The chain will be completed with a food service operation and a sensory laboratory. In addition to technologies themselves, students will also be engaged in nutritional consulting and other related fields.
A glass tunnel will be constructed above the operations, allowing interested students and the public to see what food production looks like in practice. "Such access is impossible in a regular food production company. Students have very limited opportunities to familiarize themselves with production technologies in a real environment," added Stupka.
