When William Thomas is mentioned, the residents of Brno think of the best butter croissant in the city, and it is Vilém and Tomáš who have been creating products according to French recipes for a few years under the established brand of a craft bakery with truly honest ingredients. At the beginning of 2021, they invited us to realize the interior of the bakery with seating on Josefská Street in Brno. Simultaneously with the design process, a complete rebranding of their brand was also taking place after several years, so the collaboration took place in coordination with the graphic studio Simpléz.

While the ground floor repeats the established concept of a shop, where it is possible to see directly into the production area and uses the same principles as the smaller branch on Jaselská, we had a relatively free hand on the second floor from Vilém and Tomáš. The limitations were more about the space itself rather than its brief: whether it was the relatively low arched beam ceiling, irregular walls, the location of the air conditioning outlet within the facade, or the already rapidly ongoing renovation of hygiene facilities. The clients' vision was to expand the bakery concept to include self-service seating that would connect to the ground-level production area.

The new branch of the bakery brought a second breath to the struggling pedestrian zone of Josefská: large-format glazing of the storefront made it possible to orient part of the sales area towards the street. We took advantage of the deep niches in the facade, which we framed in color and placed seating in them with a view of the lower level of the Ursuline convent and the Church of St. Joseph. Unfortunately, the original intention of illuminated decorative panels in the display was not realized due to the significant pressure on the overall budget, so only a two-colored version in reflecting glossy foil on a matte background remained in the niches.

Considering the irregularities of the space, the core of the layout on the floor is dominated by a central upholstered bench, around which are branched individual tables complemented by classic Ton No. 14 café chairs in playful colors corresponding to the bakery's brand manual. The furniture is made from high-quality honey oak veneer with precisely matched grain. The wall coverings and rustic plaster used on the walls instead of paint are meant to evoke the classic style of French craft bakeries. While the cladding of the beams with LED backlighting allowed for an optical increase in the vertical space height and the placement of a variable lighting system in rails, we discreetly enveloped the hygiene facilities and bakers' background in blue "darkness."
